Magic Guacamole

INGREDIENTS:

1Garlic clove
1Roma tomato – organic
1 Tbsp.Onion
¼ CupCilantro – fresh
¼Serrano chile
1Avocado
 2Limes
¼ tsp.Sea salt
dashTurmeric powder
dashCelery salt
dashGarlic powder

INSTRUCTIONS:

  1. In a small pan, roast garlic on both sides. When it is roasted, chop it and set aside.
  2. Chop the garlic, tomatoes, onion, cilantro and Serrano.
  3. Peel the avocado and place in a medium bowl. Use a potato smasher to smash the avocado.
  4. Add lime, salt and spices to the smashed avocado.
  5. Add ingredients on step 2.
  6. Taste for season.
  7. Serve with veggies (celery, zucchini, carrots, radishes, jicama, cucumbers).
  8. Divide equally among plates.

GREEN SAUCE

INGREDIENTS:

1 lb.Green tomatillos
4 CupsWater
4Serrano chiles
3 oz.Onion
2Garlic cloves
2 Tbsp.Olive oil – Extra Virgin
1 tsp.Sea salt
½ oz.Cilantro

INSTRUCTIONS:

  1. Peel and rinse the tomatillos. Put them on the large pot with the water.
  2. Cook the tomatillos on high heat for 15 minutes. While they are cooking, continue with step #3.
  3. Take out the seeds and stem of the chile.
  4. Chop the onion and the garlic.
  5. Heat a deep pan on medium heat. When hot, add the olive oil and immediately add the onion. Cook for 2 minutes, stirring so it cooks evenly.
  6. Add the garlic and cook for 1 more minute, stirring. Remove from heat.
  7. Place the cooked tomatillos, onion, garlic, chiles, and salt in the blender. Blend on high speed for 10 seconds.
  8. Pour the blend into the frying pan and cook for 5 minutes on high heat. When boiling, reduce the heat to medium.
  9. Pour the sauce into the blender. Add the cilantro. Blend on medium speed for 2 seconds.
