I grew up in Mexico. I was a very ambitious young girl. First woman in my family ever to go to college, first to work for a Fortune 500 company and first to be a business owner. Ultimately, I immigrated to the United States to pursue my education at Harvard.
Starting in my teens and throughout my adult life, I had struggles with my weight, eating disorders (anorexia, bulimia and binge eating) and a variety of physical and emotional health issues that no doctor could help me and made me feel stuck, overweight and depressed. Finally, I made the decision that if I was ever going to get control of my health, my weight and my life, that it was going to be up to me to come up with the solutions to my problems.
I looked back at my life, back to when I was a young girl growing up in Mexico, when I never had any of these issues. I found my solution in the foods that I ate when I was growing up In Mexico… in the Mexican Food Diet™.
I went on a mission to find out what was so great about Mexican food, in addition to being delicious. What I discovered was that Mexican food incorporates some of the best ingredients for reducing inflammation and helping the body get rid of toxins. Some examples of these ingredients are onions, garlic, cilantro, and lime. Mexican food also uses hot peppers and spices which have excellent properties for boosting metabolism and burning fat.
I became a certified Integrative Nutrition Health Coach and began an intense program where I have studied and trained with some of the world’s best health, weight and wellness experts. With the help of these amazing experts and after several years of experimenting on myself, I created my proprietary process that helped me lose 60 pounds and keep them off, recover my health (physical and emotional) and transform my whole life.
Through my studies and research, I learned that chronic inflammation and accumulated toxins lead to many chronic diseases, depressions and weight struggles. Therefore, finding ways to fight these 2 enemies was my main goal as they were the ones that had kept me fat, sick and sad for too many years.
I also knew that the environment we live in today, and a lot of the food we eat or the products we use on our skin and in hour homes, are loaded with toxins that can affect us in too many ways. Our body is naturally equipped to get rid of toxins and waste, but it has a limit of how much it can process and get rid of. When toxins cannot be eliminated fast enough, they begin to accumulate inside our body. Accumulated toxins are damaging to our cells so they need to be stored away. Most get stored in our fat cells. While toxins are stored in fat cells, we cannot get rid of that fat no matter how much we exercise or how little we eat. This is what had been happening to me. For years, I had been trying to restrict my food intake or over exercise to get rid of my excess weight, but it was not working no matter how hard I tried. It was so frustrating!
Other toxins can also reach our brain and organs, damaging them and leading to chronic diseases and emotional issues like depression. Once again, I experienced this. I struggled with on and off depression for almost 2 decades and had a variety of chronic diseases that started to show up in my early 40’s.
I finally concluded that Mexican food had all I needed to Get Lean and Stay Lean:
Once I knew this, l went back to Mexico and talked to my mother and I got family recipes because women in my family have never been obese. I used these recipes and modified them to maximize their health benefits while keeping the robust flavor that distinguishes our foods. From my own experience, I knew that keeping the body clean and eating delicious, satisfying meals is the secret for lasting weight loss and maximized wellness.
An even greater result of this journey was that I was able help my young daughter overcome her asthma and previous ongoing respiratory problems that required the continuous visit to doctors (and sometimes hospitals), and the frequent use of antibiotics and steroids. Whereas a few years ago, both my daughter and I had to go to the doctor at least once a month, and take lots of medicines, we now only go for our annual checkups.
I have never felt better, stronger or happier in my life!
