Energy Boosting Vanilla Chia Pudding with Pumpkin Seeds

2 Cups Organic Almond milk – unsweetened (or other unsweetened and organic non-dairy milk like Cashew, Macadamia, Coconut)
½ Cup Chia seeds – organic
½ tsp. Vanilla extract
1 tsp. Liquid Stevia (I like SweetLeaf Sweet Drops clear concentrate because it is pure Stevia without sugar or other additives that post powdered stevia brands have. 1 Cup Mixed organic berries: blueberries, strawberries
1/3 Cup Pumpkin Seeds organic (or other nuts or seeds)


  1. Combine all ingredients except berries and pumpkin seeds and mix well for 1 minute until the mix begins to thicken.
  2. Store mix in the refrigerator for at least 1 hour but preferably overnight.
  3. Divide mix into 2 individual bowls. Add berries and pumpkin seeds equally.
