Energy Boosting Vanilla Chia Pudding with Pumpkin Seeds
|•||2 Cups||Organic Almond milk – unsweetened (or other unsweetened and organic non-dairy milk like Cashew, Macadamia, Coconut)|
|•||½ Cup||Chia seeds – organic|
|•||½ tsp.||Vanilla extract|
|•||1 tsp.||Liquid Stevia (I like SweetLeaf Sweet Drops clear concentrate because it is pure Stevia without sugar or other additives that post powdered stevia brands have. |•||1 Cup||Mixed organic berries: blueberries, strawberries|
|•||1/3 Cup||Pumpkin Seeds organic (or other nuts or seeds)|
- Combine all ingredients except berries and pumpkin seeds and mix well for 1 minute until the mix begins to thicken.
- Store mix in the refrigerator for at least 1 hour but preferably overnight.
- Divide mix into 2 individual bowls. Add berries and pumpkin seeds equally.
