Energy Boosting Vanilla Chia Pudding with Pumpkin Seeds
INGREDIENTS:
• | 2 Cups | Organic Almond milk – unsweetened (or other unsweetened and organic non-dairy milk like Cashew, Macadamia, Coconut) |
• | ½ Cup | Chia seeds – organic |
• | ½ tsp. | Vanilla extract |
• | 1 tsp. | Liquid Stevia (I like SweetLeaf Sweet Drops clear concentrate because it is pure Stevia without sugar or other additives that post powdered stevia brands have. You can find a store to buy it by CLICKING HERE or you can order it at THRIVE MARKET an online wholesale store where everything is much cheaper. |
• | 1 Cup | Mixed organic berries: blueberries, strawberries |
• | 1/3 Cup | Pumpkin Seeds organic (or other nuts or seeds) |
INSTRUCTIONS:
- Combine all ingredients except berries and pumpkin seeds and mix well for 1 minute until the mix begins to thicken.
- Store mix in the refrigerator for at least 1 hour but preferably overnight.
- Divide mix into 2 individual bowls. Add berries and pumpkin seeds equally.
